The roots of Slowness sit in the earth of La Granja Ibiza, a 10-hectare biodynamic farmstead anchored by an 18th-century stone house devoted to discourse around food that we created and operated from 2016 to 2021 on the Balearic island. Since the creation of this iconic project, we have assembled a community of farmers, producers, creatives and artisans whose work engages with slowness toward a resetting of values. Our Portugal-based community farm project, Friends of a Farmer, continues this work of cultivating agrarian ethics and reviving culinary crafts.
But the best way to understand any farm is to begin, quite literally, at the roots. We followed a selection of crops as they made their way from soil to sustenance in a highly sustainable, zero-waste process presented by the farmers, cooks, critters and creative minds who make the farm what it is today.
